Latte
Double espresso, generous steamed milk, light foam. Smooth and mellow.
The latte is the most widely ordered espresso drink in the world, and also the most widely made badly. At its best, it's a double espresso combined with a larger volume of gently steamed, sweet whole milk and a thin layer of microfoam. The milk should taste naturally sweet from the steaming process: not sugary, but the gentle sweetness that well-heated milk develops when the proteins break down correctly.
At Skippy, a latte is 220–240ml: double espresso in a cup, followed by steamed whole milk poured from a height to integrate the layers, with a thin surface of microfoam. The espresso should be detectable in the flavour, not hidden behind the milk, but complemented by it.
The latte is the right choice if you want the comfort of a larger milk drink but still want to taste the coffee. If you want the coffee to be more prominent, try the flat white instead.
