The cappuccino is one of the great espresso drinks, and one of the most frequently made badly. At its best, it's a precise balance of equal thirds: espresso, steamed milk, and thick, dry foam. At its worst, it's a large cup of warm milk with a thin brown layer on top.
At Skippy, we make a traditional 150–180ml cappuccino: double espresso as the base, steamed whole milk poured in, and a generous top of milk foam. The foam should be thick enough to hold its structure but not so dry that it sits apart from the liquid. The espresso should cut through both the milk and the foam.
The cappuccino suits people who want the strength of espresso in a more textured, rounded drink. It's a morning coffee for people who know what they're doing.
